Every year the same thing happens.

You decide this is the year you will make modak at home. You buy the rice flour. You watch three videos. And the first one cracks open in your hands.

Here is what nobody tells you.

Rice flour dough cracks because it gets cold.

Rice flour has no gluten. Gluten is the stretchy thing in wheat flour that holds dough together. Rice flour does not have it. Hot water is the only thing that makes rice flour stretchy. The moment the dough cools down, it becomes dry sand again. Then every pleat you fold will split open.

Knead the dough while it is hot. Keep it under a damp cloth every single second you are not touching it.

Take a clean cotton cloth. Wet it. Squeeze out all the extra water. Cover the dough with it. Cover the small balls with it. Cover the finished modak with it too, until they go into the steamer.

If your dough still feels dry, do not add cold water. Dip your palm in warm water and knead again. Cold water will make it worse.

That one habit is the difference between 12 broken modak and 12 perfect ones.
